If you are after a sweet treat that is natural and not full of nasties give this recipe a go.

Ingredients for the caramel

  • 1cup of pitted dates
  • 1 1/2 tablespoons peanut butter (ideally homemade) 
  • 1 pinch of himalayan salt 
  • 2 drops of stevia 
  • 1 tablespoon coconut oil.

Chewy oat base ingredients

  • 2 tablespoons of the above caramel mix 
  • 3 - 4 tablespoons oats blended oats

Raw chocolate Ingredients

  • 1/2 cup coconut oil 
  • 1/2 cup raw organic cocao 
  • 1 pinch of salt 
  • 2 tablespoons maple syrup

Method

  1. Soak the dates in hot water for 10minutes to soften, and then drain as much water out as possible 
  2. Add oats to a blender and blend until at a fine consistency. Remove from blender and add to a bowl. 
  3. Add the soaked dates, along with the remaining caramel ingredients to the blender and blend until a smooth caramel paste forms. Remove and add to a bowl. 
  4. Add 2 tablespoons of the caramel paste to the oats and mix with a spoon until well combined making the chewy oat base. 
  5. Divide the chewy oat base up and form the shape you would like with your hands (I made rectangles) 
  6. Add the onto a silicone baking sheet or any other baking sheet. 
  7. Add the caramel mixture on top of each chewy oat base, and spread until it covers the whole surface (It can be quite a sticky process) 
  8. Put into the deep freeze for 45mins - 1hr. 
  9. Start making the raw chocolate. Melt the coconut oil and slowly add in the cacao powder followed by the rest of the ingredients and stir until well mixed. Leave to cool slightly. 
  10. Remove the chewy oat and caramel bites from the freezer and dip in the chocolate before putting back in the deep freeze for another 20-30minutes 
  11. Once chocolate is set - they are ready to be served - store in a tupperware in the fridge/freezer to keep them from melting. 

Note always remember - just because something is raw-unprocessed-chemical free- refined sugar free. It still has calories so these should only be enjoyed as a treat.
